Sunday Brunch –
Well, it is Sunday, the day after Halloween. We did not get any trick or treaters. That did not surprise me. Our house is off the beaten path and is not really in a neighborhood. It has been a year since we moved here. So much has happened this year. The economy tanked. Me and Corvette’s work hours have been cut. We lost our Lolly Pop Kid, Hippy Guy got married and had twins. Honestly, if I could go back and change this year I would.
Last night was very strange, our neighbors had a Halloween Party. That is all fine and good except apparently it was more like a lingerie party for their teen daughter. Young teen daughter. I did not actually witness this but Corvette did. He went out front and they invited him over. The next thing I know he comes home and starts telling me about very young girls parading around in lingerie. These people seem to think it is ok for teens to drink, and party. A couple of weeks ago they had a major fight which they apologized for the next day but I do not get it. The guy is a Christian School Teacher! Whatever on to better things.
So today’s Sunday Brunch recipe is shredded beef burritos made in the crock pot.
- 2 lbs chuck roast
- 1/2 teaspoon ground cumin
- 1 teaspoon dry oregano
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon paprika
- 2 cups tomatoes, chopped fine
- 1/2 cup chili pepper, chopped fine
- 1 onion, chopped fine
- 1 garlic clove, minced
- 1 cup water
- 12 flour tortillas
- Remove as much fat as possible from roast.
Place roast in crock pot and cover with remainder of ingredients except tortillas.
Cook on low for 8-10 hours.
With fork shred roast and stir well with other ingredients in crock pot.
Drain meat mixture well and serve in flour tortillas with your favorite toppings.
