Sunday Brunch

This week started out with a real bang. We had a fierce storm early Monday morning bringing close to hurricane force winds, downed trees and mud rain to the Desert Southwest. I recounted the whole experience on juliannahbydesign. My other blog is still in transition so if you cannot get to it check back in a few days.

The rest of the week was uneventful except Corvette came down with a nasty cold, for the fourth time this year! He tells me there are many people at his work who are sick and that is why he keeps catching it. As for me, I have managed to dodge the bullet each time. Knock on wood! I just walk around trying to avoid touching anything he touches and even spent a couple of nights on the couch to avoid the germ fest in our bedroom. At least he is feeling better now, so hopefully there will be no more sickness this year.

Saturday was Cinderella’s wedding shower; complete with, of course a Cinderella theme. My daughter’s BFF, Navy Girl and soon to be MIL threw the shower and along with some great food, we had glass slipper favors, a rum vanilla cake and a surprise visit from a special friend that Cinderella has not seen in awhile.

We played lots of games which included: Bridal Charades, another one trying to not mention the Bride and Groom’s actual names (in which case we would lose the diamond ring on a ribbon to the person catching us saying the names), and my personal favorite, dressing each other in toilet paper wedding gowns. We had teams for that one and I will tell you why it was my favorite. I got to be one that was dressed and guess what? I won! My prize? A pumpkin coach candle. My team consisted of Cinderella’s future SIL and one of Lolly Pop Kid’s daycare teachers. They designed my gown complete with a train and veil. I even had a bouquet! Butterfly got to be dressed as a bride too. Cinderella’s future NIL was the third bride. Personally, I thought we all looked incredible considering it was toilet paper!

Six weeks until the wedding and considering how much fun the shower was, I know the wedding will be perfect!

Today’s Sunday Brunch is Man-Size Manicotti. If you ever saw the movie Grumpier Old Men, you know what I am talking about. Also, this manicotti has meat in the shells, not just cheese. Corvette is anything but a Vegan and meatless meals do not appeal to him. One time we went to eat at a local Italian restaurant and he ordered manicotti. I forget to tell him that it is usually made with cheese. Needless to say he did not really enjoy his dinner that night. Just another reason mine is called:

Man-Size Manicotti

1 box manicotti pasta

1 jar spaghetti sauce

1 pound hamburger

1 15oz tub of ricotta cheese

2 tbls spoons parmesan cheese

1 tsp parsley

Brown the hamburger. Mix in about a third of the ricotta cheese and about a third of the sauce. Cook the pasta and let them cool. Spoon the hamburger mixture into the pasta. Place them in a baking dish and pour the remaining sauce over the stuffed pasta. Put the rest of the ricotta cheese on top and sprinkle with the parmesan cheese and parsley. Bake at 350 degrees for a half an hour.

This was the week of replacing credit cards. Last Sunday, Corvette thought he lost his wallet. We looked high and low and could not find it. I had to get online and transfer all the money from one bank account to another to make sure nobody get access to it. Next, numerous phones calls were made to cancel debit and credit cards. We had to pay a few bills from the account with the money and organize the amounts so we knew where the money was going and what was left over. We have two accounts because that just works for us. Corvette is a stickler for recording everything in his check book. Me, not so much. I prefer to check online for the amounts to clear. As far as balancing a checkbook, that just doesn’t happen with me. I am far too right-brained to even attempt it. I think in pictures not numbers. That is one reason I like blogging so much. Trust me if math was involved I would not be blogging!

So, after taking care of all the financial issues this weekend we went to work on Monday. After work I came home and went to change my clothes. I found a pair of shorts and a t-shirt to put on. As soon as I picked up the t-shirt I saw it. What did I see you ask? You got it. The missing wallet! We have no clue how it got on my shelf but, what really baffled us is how we did not find it as we went through the house several times before giving up and taking action. Oh well, chalk it up to fairies, trolls or the black hole that eats car keys, remote controls and every ink pen we bring in the house.

The rest of the week was uneventful until Thursday when I receive a call from my credit card company. Seems someone hacked my account! Apparently there were three charges all on the same day from a questionable company. The card company asked me if I made the charges and of course I did not. So thank goodness the card company was on the ball and questioned the charges in the first place. They immediately cancelled the card. I will not be charged for the mysterious charges. Thank goodness another catastrophe averted!

100_1442On a good note, Fuzzy and Wuzzy turned three months old on Friday the 13th. Not bad for a day associated with bad luck. That’s Wuzzy on the left and Fuzzy on the right. You see those shoulders on Fuzzy. I think football just might be in his future! Especially if Hippie Guys has anything to say about it Green Bay Packers look out! Fuzzy’s coming!

We rounded out the week by purchasing a new TV stand for our flat panel TV. Thetvstand TV was sitting on an old stand and it was not a good match. Now the TV will sit up higher and everything will be flatter against the wall. Corvette bought it without me at the store and generally that is not a good idea. He did call me and I got online to look at it but there was not a picture of it. He was going to get one made of wood but they were out of stock so he went with this one. I think it will have to grow on me, but this is definitely better than the old stand.

Well, that is it from the chocolate household. Today’s Sunday Brunch recipe is in honor of Thanksgiving. Although I am not preparing Thanksgiving dinner this year as we are attending Hippie Guy and Flower Child’s first hosted Thanksgiving dinner. This is my recipe for Sausage Stuffing in the Crock Pot.

Two 6 oz. bags Mrs. Cubbison’s stuffing
1 cup (2 sticks) melted butter or margarine
6 oz sweet Italian sausage, browned and crumbled
1 granny smith apple, chopped
1 cup chopped onion
1 1/2 cups broth

Combine dressing with butter or margarine and vegetables.  Stir liquid in gradually.  Spoon into the crock pot and place setting on low. The stuffing will be ready in about three to four hours.  Makes 12 (1/2 cup) servings.


Sunday Brunch

Here we are with another edition of Sunday Brunch. I did not have a post last Sunday because of the my deployed son’s debacle car payment. After everything I went through which included multiple phone calls, begging, pleading and melting down several times, I received an email from LCpl Honda on Friday that two, count them two payments had been debited from his account (insert screaming and hair pulling from head here).WomanScreaming100X72

Now picture me, frantic Marine Mom at 6:00 in the morning desperately making more calls again and once again gathering up all the info, power of attorney, fax numbers and such for another day of stress and feeling like a major @$%*up. Just when I thought it was ok. Nope. Well the bank could not reverse the debits. They were already gone. Car payment company would not return the money. So now here I am at 9:00 in the am trying to figure out how to get money to my son who is in port in a third world country. At the time he thought he would get liberty and wanted to have money to go ashore. I checked into wiring money but Lord knows where it would end up. Sent several emails to deployed son but since it was the middle of the night there that did not work out too well. I finally started Googleing everything I could think of. Yes, Google is my friend lately. I finally found out that I could wire money from my bank to his bank. Problem solved!

The only good thing that came out of this is I received a call from LCpl Honda on Friday afternoon. He had not received my emails and was calling wondering if things had been resolved. Thank goodness I was able to tell him they were. It turns out he was not able to leave the ship so the money was not such and issue.

After all of this we managed to have a great weekend with Butterfly. We ate popcorn, Picture 001made rootbeer floats and watched many movies. Saturday was very hot here in the desert southwest and Butterfly and I made a not-so-great trip to up the park in the middle of the day. I live about a half block from a park, but it must have been close to 100 degrees that day. We managed to have a better park trip on Sunday morning with friends. Butterfly learned better bicycle skills, fed ducks and was interviewed by our local news channel that is doing a news story about cleaning up our local park lake.

The evening was better. Corvette, Butterfly and I planted two Birds of Paradise in the backyard. It turned intobird quite a mudfest, but was a lot of fun.

Sunday was great. It was my Dad’s, Grandpa DingDon’s 84th birthday. Happy Birthday Dad!!! We joined my sister Krafty, bro-in-law Speedracer, Speedracer’s Mom, Cindrella andButterfly in a celebration with good food and birthday cake. I dug up a baby cactus to plant in my yard, we had a bit of a political discussion and basically a nice day.

My Cinderella bought me a beautiful dress for her wedding. My search for the perfect dress Picture 028has been ongoing for awhile now. She also bought Corvette a great tie.Picture 027 I will now blend in with the guys in the wedding and Corvette with blend in with the ladies. Perfect.

So the recipe today for Sunday Brunch is:

Tequila Sunrise


2 ounces gold tequila
4 ounces fresh orange juice

3/4 ounce grenadine Cause I need it after this week!




Sunday Brunch

Well here we are another edition of Sunday Brunch. My week was pretty routine. I did get and email from LCpl Honda on Monday. He said the internet was down and he was not able to make contact before that time. Basically he just wanted to know if I took care of some business concerning his car. Yes, that’s my son, no “I miss you mom.” or “I am homesick mom.” All kidding aside, he is older and I do not expect to have a lot of contact with him. Thank goodness for FaceBook and Twitter. I feel very fortunate to have access to information about this deployment.

I started a shutterfly account in order to keep friends and family updated. So now I am keeping up with two blogs, this one and juliannah by design, writing for Parent’s Zone and LCpl Honda’s deployment site. I am very pleased to announce that juliannah by design is actually making me some money. Yea for me! It is really nice to turn something you love to do into something you get paid for.

After suffering major dog hair infestation, we took Buddy, our long-coat chihuahua to the groomers. Buddy was leaving huge tufts of hair everywhere. So he is now sporting a buzz cut. Of course, going to the groomer is always a traumatic event but when I get to work and102_2617 discover dog hair glued to my clothes something has to give.  He really is not as defeated as he looks. My big, red dog Lucie did not recognize him when he came home. Since Lucie has only been with us for a few months, she has never seen Buddy with a buzz cut. What did I do while Buddy was getting buzzed? Vacuumed the house from top to bottom of course!

Our garden is experiencing a resurgent in growth. July and August took a toll on the garden. It was just a bit too hot and I believe the plants went into a sort of hibernation against the heat. Corvette went out yesterday and harvested our lone cucumber and his belovedPicture 003peppers. He also planted some more lettuce and spinach. We planted these earlier but alas, the heat was too much and they did not make it. Hopefully we will have better luck this time around. Corvette and I decided to plant early in the spring, lay off in the scorching hot months of July and August and resume late September and early October.

So this brings me to today’s Sunday Brunch recipe:

Steak and Honey Mustard Chicken, Macaroni Salad and Corn

T-bone steak seasoned with sea salt, pepper, onion powder and meat tenderizer. Baked in the oven at 350 degrees. Then broiled for about five minutes on each side.

Boneless chicken seasoned with sea salt and onion powder and baked in the oven at 350 degrees until almost done and then cover with Honey Mustard Sauce

1/4 cup of honey

1/4 cup Morehouse Dijon Mustard (the best mustard in the world in my most humble opinion)

Macaroni Salad

1/2 a package of Salad Macaroni cooked

1/8 cup of red bell pepper, green chile, carrots, white onion & pickle relish chopped

1/2 cup mayonnaise

1/4 cup rice vinegar

1 Tbsp sugar

Mix everything together and add a little salt, pepper, & paprika chill and serve.

Picture 026Oh, one last news item. Lolly’s tree has flower buds! The tree is doing very well and I am sure we will be enjoying oranges this spring!

Sunday Brunch

I feel like this week was a month long. I guess because of our less than 24 hour trip to San Diego to see LCpl Honda off on his deployment. Picture 034Yes, it was hard and stressful but I am glad we went. My emotions are just now starting to come out. I miss him even though the last few years I have not seen him very much. The thought of my child on this huge ship in the middle of the sea weighs on my mind. Yes, it could be worse. I am pretty sure that he will not be in a combat situation, but he is gone and I can not just pick up the phone and talk to him. Plus, the holidays are coming and he will not be here.

This year has brought such joy and sorrow. 100_2874We are blessed to welcome Fuzzy and Wuzzy to our family. Two beautiful twin boys. Their father, my youngest son, Hippie Guy just turned 25 years old. It is hard to imagine my baby at that age. I watched him get married, have children and become a man.

Over the last three years, I watched my oldest son evolve from someone with no purpose to a person who now stands up and defends our country. He marched in Washington DC as symbol of the Marine Corps and now is part of a team force sailing the oceans in defense of our country.

For over eight years I have watched my daughter go from high school wrestling to becoming an Army MP to then becoming a mother. I watched her suffer when her daughter, Butterfly became ill with cancer. I watched here overcome and deal with all that entailed. Then I watched her scream when her son, Lolly Pop Kid went to heaven.

I guess I am having a bit of a bad week.

But beyond that, Butterfly and Cinderella went to see Miley Cyrus. aka Hannah Montana.faithconcert They had a great time.

So, today brunch’s is pretty simple. Pork Chops and Macaroni and Cheese. I have to admit that Stouffers Macaroni and Cheese is the best. Pop it in the oven and an hour later it’s done.

Two Big, thick pork chops

Season with salt, pepper, onion powder & paprika. Bake at 350 degrees for about 45 minutes and then broil on each side for about five minutes.Picture 034

Bake the Mac & Cheese according to the directions on the package.

Yum, yum easy and simple.

Sunday Brunch

This week has been a bit stressful. My marine son was supposed to deploy last week but the ship had problems so that did not happen. Now we are doing Semper Gumby and waiting for the word to go. Since we have to pick up his car, we can not really make plans for any thing. 

We went and visited our twins yesterday. They have really grown and are more alert than ever. Wuzzy even smiled at us! I did not take any pictures because the other grandpa was taking many pictures and I hope to get a hold of some of them. But it was a nice day with the boys.

Cinderella and Tango went on a hike and encountered a rattlesnake but managed to avoid a snake bite. Tango walked away with a bee sting. Butterfly won a Huffy bike from her daycare. Now she owns two bikes. Very exciting for her!

Today I am doing laundry and I cooked a tortilla casserole, that I just winged. I tastes good and I will be eating it for lunch tomorrow. I have to work overtime next week in anticipation of not being at work on Thursday and Friday. Sometimes I hate Semper Gumby.

Today’s Sunday Brunch recipe is Juliannah’s Tortilla Casserole

Start with a basic white sauce:

In a small, heavy saucepan, melt 2 tablespoons of butter over low heat. Blend 2 tablespoons of flour into the melted butter. Add 1/4 teaspoon of salt. Cook over low heat, stirring, for 4 to 5 minutes. Cooking for this length of time will minimize ‘flour’ taste. Slowly add 1 cup of milk, stirring constantly. Continue cooking slowly until smooth and thickened.

I added some Jarlslberg Chesse that I needed to do something with. Next I added some chopped onion and tomato, about 1/4 cup of each. I boiled  about a pound of chicken and cut five corn tortillas in strips and then cut them again.I layered the chicken and tortillas and then mixed in the sauce mixture. I seasoned with onion powder, salt, and pepper. I then put about 1/4 cup of grated cheddar cheese on top and baked this at 350 degrees for about twenty minutes.

Picture 032Yum, it turned out well and tastes great. I am just not good at following recipes and much better at improvising.

Sunday Brunch

We enjoyed a weekend with Cinderella, Tango & Butterfly. They came down to to visit and see Fuzzy & Wuzzy our new twins. The twins are doing well, but always seem to be sleeping when we visit.

Cinderella gifted Hippie Guy & Flower Child with a digital camera so they can provide us with lots of pictures of Fuzzy & Wuzzy. I have a few more to post and will do that at the end of this post.

I like my new blackberry phone but it has quite a learning curve. It is like a mini computer. Any help would be appreciated.

Today’s recipe is my most favorite potato salad. It doesn’t really have a name so I will just call it Juliannah’s Potato Salad.

Eight to Ten Red Potatoes

2 Hard Boiled Eggs

1 cup Mayonnaise

1/4 cup Rice Vinegar

1 Tbsp Sugar

1/4 cup Red Bell Pepper

1/2 tsp Onion Powder

1/2 tsp Salt

1/2 tsp Pepper

1/2 tsp Paprika

Boil the potatoes with the skins on until done. Boil the eggs until done. Cut up the potatoes and eggs. Cut the bell pepper into small pieces. Mix potatoes,eggs & peppers. Mix mayonnaise, vinegar, spices & sugar into potatoes, eggs & peppers. That is it. You can also substitute green bell pepper, pickle relish or anything else you may desire.

Today is also the  2nd month angelversary for Lolly Pop Kid. We all miss him so much. I had a knock at the door today and it was Mormon missionaries. They gave me a card with a illustration of Jesus and on the back of the card it said, “Faith in Christ can help you resolve personal and family challenges.

God Just keeps knocking on our door.

Lolly Pop Kid we love you and miss you. We want you back.

I have not been posting too much lately. I guess that is because I just do not have the gumption (sp?) or the ideas to talk about. I am going to try and post everyday. I need to get back to posting because it helps me get through my life. I have already established Military Monday, Wordless Wednesday & Quote of the Week. I want to include Sunday Brunch which I think will be a little recap of my week and a recipe that maybe someone might like to try.

I decided to include Angel Tuesday. Lolly Pop Kid went to heaven on a Tuesday. I know that I will never live through a Tuesday without thinking about him leaving us. That is just the way it is. I think that I will profile a child that is going to heaven or a famly that has lost a child. I know what it is like to have a lived with one that is sick with a possible terminal illness. Please pray for Sydney

There are a lot of children out there that need prayers. There are a lot of parents’ that lost their child. I just need to reach out.

So here is the recipe that I would like to share:

Chipolte Chicken with Flaming_Tequelia Pepper Salsa Avocado Ranch Dressing



    4 tablespoons EVOO – Extra Virgin Olive Oil, divided 6 slices smoky bacon, chopped

  • 2 1/2 pounds ground chicken breast
  • 2 medium onions, chopped
  • 4 cloves garlic, finely chopped or grated
  • 2 to 3 tablespoons puréed chipotles in adobo
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1 tablespoon smoked paprika
  • 3 tablespoons tomato paste
  • 1 quart chicken stock
  • Salt and ground black pepper
  • 1 yellow bell pepper, seeded and chopped
  • 1 red bell pepper, seeded and chopped
  • 1 orange bell pepper, seeded and chopped
  • 2 jalapeños, seeded and finely chopped
  • 1 medium red onion, chopped
  • 3 to 4 shots tequila
  • Juice of 1 lime
  • 1/4 cup cilantro leaves, chopped
  • 1 avocado, pitted
  • 1 cup buttermilk
  • Juice of 1 lemon
  • 1/4 cup finely chopped chives
  • Crushed tortilla chips, for garnish


Place a large, heavy-bottomed pot over medium-high heat with 2 turns of the pan of EVOO, about 2 tablespoons. Add the bacon to the pan and cook until golden brown, about 5 minutes. Add the chicken to the pot and continue cooking until golden brown, 5-6 minutes.

Add the onion and garlic to the pot and cook until the veggies are tender, 4-5 minutes. Add the puréed chipotles, cumin, coriander, paprika and tomato paste to the pot and cook until the spices are aromatic and beginning to caramelize, about 1 minute. Add the chicken stock, some salt and pepper to the pot and bring up to a bubble. Reduce the heat to medium and simmer until thickened, about 5 minutes.

Step While the chili is simmering, place a medium skillet over medium-high heat with 2 turns of the pan of EVOO, about 2 tablespoons. Add the peppers and red onion to the skillet and cook until the veggies are tender, 4-5 minutes. Remove the skillet from the heat and add in the tequila. Return the skillet to the heat and flame the tequila to burn off most of the alcohol. Add the lime juice, cilantro and some salt to the salsa. Reserve.

In the bowl of a food processor combine the avocado, buttermilk, lemon juice and chives. Process until smooth then season with salt and pepper.

Serve up the chili topped with some of the tequila-pepper salsa and avocado ranch. Garnish with some crushed tortilla chips.

All I can say is pray for us and we will pray for you. This recipe probaly seems over the top, but it is just the way I feel at this point.
